Boosting immunity is another reason why you should make amaranth leaves a regular part of your diet. These leafy greens are rich in vitamin C; consuming 100 grams of the leaves will meet 70 percent of your daily requirement for vitamin C.
They boast an impressive mineral profile, including calcium, iron, magnesium, and potassium, which are crucial for bone health and muscle function. The dietary fiber in amaranth leaves supports healthy digestion, prevents constipation, and promotes a well-functioning gastrointestinal system.
It should be noted that amaranth has a high glycemic index(a measure that ranks foods based on how quickly they raise blood sugar levels), approximately 107, and an insulin curve (insulinogenic effect typically shows a rapid and significant increase in insulin levels that suggests an insulinogenic effect). This is the reason why it is suggested that grain should be consumed in combination with low-GI ( glycemic index) foods like wheat. Mixing wheat with amaranth can reduce its GI to 25.
Precautions should be taken by people with special conditions. For people with intolerance to lysinuric protein, eating amaranth may cause diarrhea and stomach pain. Moreover, another side effect of increased lysine is the body's enhanced calcium absorption, which can bring about damaging amounts of free calcium in the body.
Moringa
Moringa is rich in vitamins and minerals. One cup of moringa leaves will contain 2 grams of protein, magnesium (8percent of the RDA(recommended dietary allowance), Vitamin B6 (19percent of the RDA), Iron (11percent of the RDA), Riboflavin (11percentof the RDA), and Vitamin A (9percent of the RDA).
The leaves of M. oleifera are rich in minerals like calcium, potassium, zinc, magnesium, iron, and copper. Vitamins such as beta-carotene of vitamin A, vitamin B including folic acid, pyridoxine, and nicotinic acid, and vitamins C, D, and E are also present in M. oleifera.
To date, studies show that Moringa oleifera may lead to modest reductions in blood sugar and cholesterol. It may also have antioxidant and anti-inflammatory effects and protect against arsenic toxicity. Moringa leaves are also highly nutritious and should be beneficial for people who are lacking in essential nutrients.
Amounts and dosage: Consuming moringa powder is proven to be safe, even at higher levels. The daily dosage should be limited to the equivalent of 70 grams of moringa leaves per day or 11 teaspoons of moringa powder.
