Introduction:

Food is necessary for living. It is a source of energy and nutrients for the body. As a result, food items are necessary for human growth and development. Not only this, but food substances are also important to maintaining the normal physiological function of the human body. However, the food consumed is made up of various substances. These substances serve various functions apart from supplying nutrition. All these substances are processed or cooked through different processes to make edible or consumable substances. The consumption of these food items daily is known as diet. The goal of food consumption and diet is to fulfill the physiological needs. That is why knowledge about various food items is necessary for a healthy lifestyle.

What Is Ultra-Processed Food?

As already discussed, food items are substances that can be obtained from numerous sources. Also, these substances are cooked and processed in different ways to make edible items. Because of these complications, classification of food items based on processing is needed. This classification is known as the NOVA classification. Based on this classification, food items are categorized into four groups. These groups are;

  1. Unprocessed and Minimally Processed Foods: These food items are made up of natural ingredients like plants, vegetables, and animal products. Minimally processed techniques like crushing, grinding, boiling, non-alcoholic fermentation, pasteurization, chilling, and freezing are also used to make these food items.

  2. Processed Culinary Ingredients: These are ingredients like butter, oil, cheese, and salt. These ingredients are obtained from natural sources and are processed industrially or by homely methods.

  3. Processed Foods: The canned and bottled foods come in this category. Food items like fish, ham, bacon, pastrami, and fruits are minimally processed and stored in canes or in bottles and are sold.

  4. Ultra-processed Foods: These formulations consist of ingredients primarily intended for exclusive industrial purposes, which are typically developed through a series of industrial techniques and processes. That is why these are referred to as ultra-processed foods.

Some commonly used ultra-processed foods include carbonated beverages, packaged snacks that are sweet, fatty, or salty, confectionery such as candies, mass-produced bread and buns, cookies, pastries, cakes, and cake mixes. Other examples include margarine and other spreads, sweetened breakfast cereals, fruit yogurt, and energy drinks. Pre-prepared dishes like meat, cheese, pasta, and pizza are also considered ultra-processed. This category also includes poultry and fish products like nuggets and sticks, as well as reconstituted meat products like sausages, burgers, and hot dogs. Lastly, powdered and packaged instant soups, noodles, and desserts are also classified as ultra-processed products.

What Is the Food Value of Ultra-Processed Food?

The ultra-processed food items are made up of a variety of items. These items are;

  1. Cosmetic additives are key ingredients present in ultra-processed food items. The list comprises flavors, flavor enhancers, dyes, emulsifiers, salts, sweeteners, and thickeners, as well as anti-foaming, bulking, carbonating, foaming, gelling, and glazing agents.

  2. Some ingredients which are not used in cooking or kitchens are also used in ultra-processed foods. The list of ingredients comprises hydrolyzed proteins, soy protein isolate, gluten, casein, whey protein, mechanically separated meat, fructose, fruit juice concentrate, maltodextrin, dextrose, lactose, soluble or insoluble fiber, and hydrogenated or interesterified oil.

What Are the Effects of Ultra-Processed Food on the Elderly?

The ill effects of ultra-processed foods on the elderly are;

  1. Elderly individuals are susceptible to cardiovascular diseases. These are caused by changes in the heart and blood vessels. With increasing age, the elasticity of blood vessels is lost. This causes an increase in blood pressure. Apart from this, cardiac changes are responsible for the alteration in cardiac afterload, fibrosis of the heart muscles, and alteration in the shape of the heart. Needless to say, ultra-processed foods are associated with increased blood pressure. The presence of excessive amounts of sodium in these foods is responsible for hypertension and heart diseases.

  2. Metabolic dysfunctions are common in elderly people. Dyslipidemia is responsible for high cholesterol and lipid levels in the blood. These cholesterol molecules are associated with blockage of the blood vessels. Ultra-processed foods are further responsible for a high lipid level in the blood. This is caused by excessive trans fat and saturated fat present in these foods. As a result, incidents like heart blockage, heart attacks, stroke, and blockage of the blood vessels become more prevalent.

  3. Diabetes and high blood sugar levels are common in elderly individuals. Ultra-processed foods are responsible for a rise in the blood sugar level due to their high glycemic index. Also, added sugar in these foods is associated with high blood sugar levels. As a result, these foods are harmful to diabetic patients. Not only diabetes, ultra-processed foods are associated with around 28 percent increase in the prevalence of metabolic syndrome.

  4. The ultra-processed food items are rich in sticky carbohydrates. The fiber content of these foods is very low. As a result, consumption of these food items may cause complications like constipation and bowel dysfunctions. Also, regular consumption of these items may alter the level of gut micro bacteria. Because of this, these food items are harmful to patients suffering from irritable bowel syndrome (chronic inflammation of the gut) and ulcerative colitis (chronic ulceration in the colon).

  5. Ultra-processed food items are energy-dense food items. As a result, these food items are responsible for obesity and weight gain. These might lead to a lot of fatal complications like obstructive sleep apnea, diabetes, heart diseases, and kidney disorders.

  6. Altered levels of gut microbiota and chemicals in ultra-processed food items lead to low levels of systemic inflammation. This increases the process of aging and may cause rapid cell death. Also, ultra-processed food items alter the levels of anorectic hormones (hormones responsible for hunger and appetite). A low level of GLP-1 and PYY (gut hormones responsible for anti-obesity and anti-diabetic actions) are seen in such patients.

However, these food items may hurt the geriatric health. Excessive consumption of these foods is responsible for hypertension, cardiac problems, and metabolic dysfunction.
